啤酒糟是啤酒生产过程中的主要副产品,含有丰富的营养,一般被直接废弃,造成资源浪费甚至环境污染。为合理开发啤酒糟资源,文章通过分析啤酒糟中的营养成分及利用现状,结合我国养殖业中高蛋白饲料需要,综述了利用啤酒糟生产高蛋白饲料的发酵方法及其在家禽、猪、牛及水产品养殖业中的研究进展及啤酒糟生产高蛋白饲料的发展前景。

Brewer＇s grains is the main by-product in beer production process, which is rich in nutrition and gen- erally discarded, resulting in waste of resources and environmental pollution. To reasonably develop the brewer＇s grains resources and according to our country＇s breeding high protein feed needs, this paper summarized the research progress of high protein feed and its application in poultry, swine, cattle and aquatic products by analyzing the nutri- tional composition and utilization situation.
